Banana Flax Muffins

My muffins are special! They have less sugar and more protein and fiber than your average muffin, and are made with healthy fats. They are less sweet than your average muffin, and more dense, but are lovely served warm with some butter, and maybe some honey or jam for kicks. Enjoy!

4 very ripe bananas (mashed)
5 eggs
1 cup coconut oil
2/3 cups milk
2 tbs vanilla extract
1 1/2 cups sugar
1 cup sour cream
2 tsp baking soda
1 tsp salt
3 1/2 cups whole wheat flour
3/4 cups flax seeds

Pre heat oven to 325 degrees.

Mix together mashed bananas, oil, eggs, milk, and vanilla.

Add sugar and sour cream. Mix.

Mix in baking soda and salt.

Mix in flour and flax seeds.

Line muffin pan with muffin cups, and I like to spray the muffin cups with a touch of organic canola oil in my Misto (a spray like Pam works too). Fill those cups with the batter almost to the top. Cook for 30 minutes.
